Extending from the lower ribs to just above the fillet. While it is leaner compared to the Ribeye, it still maintains a delicious tenderness and juiciness that make it a favourite among steak lovers. The Sirloin is carefully cut from the hindquarter, natural fat cap plays a key role in enhancing its flavour, as it melts during cooking, basting the meat and infusing it with savoury richness. This cut strikes a perfect balance between flavour and leanness, making it versatile for grilling, pan-searing, or roasting. Its slightly firmer texture offers a satisfying bite, while still delivering a succulent eating experience when prepared properly.

How to cook a great steak:
- Bring the steak to room temperature 20 minutes before cooking.
- Liberally season the steak with Sea Salt and Pepper.
- Heat a heavy-based pan until pan is smoking hot
- Cook the steak on either side for 3 – 4 minutes or until the eye of fat is starting to melt and turned a beautiful golden brown colour, and the meat is forming a stunning dark crust to it.
- Melt a small knob of butter over the steak.
- Remove from the heat and let rest for 10 minutes.
- Enjoy!
