The award-winning Silere Lamb French Rack has a rich and strong flavour that is influenced by the alpine high area where the Silere Merino Lamb graze.
Chefs love Silere Lamb French Rack, and it's simple to prepare. It's a delicate cut made from the first eight ribs close to the loin. The backbone has been removed from this cut, allowing it to be easily divided into small chops or cutlets (also known as French lamb cutlets) before or after cooking.
It is “French” because the bones have been scraped almost clean down to the meat and the whole cut can be further trimmed of fat if desired.
